Mushroom & Spinach Puff Pastry

It seems that I haven’t cooked for ages. With the Christmas and New Year season it’s been staying with family for a few days over Christmas (and feasting) then heading to Perth for catching up with other missing family members and my partner’s family (and feasting). So there’s been no cooking other than the simplest of meals when I returned home. There was a strong desire for plain food.

The same desire for plain food continues but with it the urge to try out different recipes again rather than resort to old well-established favourites.  I turned to What’s Cooking: Vegetarian as it has a lot of what appear to be variations on the usual homely meals. The instructions are clear. Each recipe takes a full page. The list of ingredients is boxed so that they stand out clearly. The instructions have each step numbered and many contain a cook’s tip. At the bottom of the page are some numbered photographs. These correspond to the numbered instructions so you have a visual of this particular step. On the opposite page is a full page photograph of the completed meal.



These pastries were easy to make and just what I felt like to get back into cooking and more serious eating. First onions were fried, then mushrooms and spinach were added with a touch of nutmeg. Cream was added and some seasoning and it was left to cool while the pastry was being prepared.



Bought puff pastry was used. It was rolled out and cut into circles of about 15 cm. Filling was placed on half and the circle folded over and sealed. A burst in a hot oven and it was ready to eat. Easy.

With a salad it made just what I wanted.
